In the V century, Romans made roasted finely chopped meat with fruit, nuts and spices. It was the closest cousin, the American culinary classic.

Apicius, a Roman gastronomy, in his book "De Re Coquinaria" (V century) described chopped meat with spices, bread soaked in wine and pine nuts, formed into a flat chop ... Was it an ancient hamburger ?!

Medieval Europe worked differently. Chopped meat (truth to be said, much tastier than minced) combined with fruits, spices and nuts, created a kind of modern pie without dough.

American roast was born in Pennsylvania in the XVIII century.

When there was a problem with meat, offal was used, treated with corn flour,  and a "loaf" was formed, sliced and fried. Everybody can always find a solution for preparing breakfast for the family.

Take note ... Book Apicius (the oldest cookbook known to us) has been translated from Latin into English by Joseph Vehling.  This translation gave the edition a comprehensive, very interesting introduction and detailed explanations regarding the products used at that time. I would recommend reading this cookbook.

In 1940, the Culinary Arts Institute published a recipe for roast beef with the addition of vegetable soup and breakfast cornflakes. The roast of ground pork (1957) contained turmeric, a dry addition to drinks and caramel. In 2008, fantasizing with additions developed even more and meatloaf became beef, pork, bacon, fried onion, garlic, celery, carrots, Worcestershire sauce, allspice, apple cider vinegar and. so it would be even tastier, dried plums . Wow! A lot of ingredients! And here I will surprise more than one person. So, prepared raw meat, baked with a sauce on top, is great, tastes very good; and, as you could expect, the icon of "melange" took the most important place at the dinner table. The experience of housewives and the right selection of ingredients, spices and their proportions, make this almost a royal meal. Simple, fast, delicious! These are three principles that interest us so much in the XXI century. And this is America's meatloaf; in other words, Polish Roman Roast in a completely different way !!!

Bacon-Prune Meatloaf

INGREDIENTS (6-8 people):

750 grams of ground, lean beef

375 grams of ground, lean, pork

3 slices of white bread

1/3 cup of milk

2 onions

3 cloves of garlic

1 stick of celery

1 carrot

2 tablespoons of butter

2 tablespoons Worcestershire sauce

1 tablespoon of apple cider

1/4 teaspoon of ground allspice

2 teaspoons of kosher salt

1 1/2 pepper

118 grams of bacon

8-10 pitted prunes

2 eggs

1/3 cup chopped fresh parsley


  • Preheat the oven to 180 degrees C (350 degrees F).

  • Soak bread in milk; after soaking, squeeze the excess milk (so that the meat mass is not too rare).

  • Cut the onions finely; minced garlic; cut the celery into thin slices; carrots thinly cut or grated (large mesh). In a deep frying pan, heat the 2 tablespoons butter and cook all together until tender.

  • Remove from heat, add sauce, vinegar, allspice, salt, pepper, bread.

  • Cut bacon, fry, drain fat, put into a blender; add prunes and blend together into an almost smooth mix ...

  • put meat into a large bowl, mix with bacon, onion mixture, eggs and chopped parsley.

  • Hand-mix gently, spoon mixture into a 9 x 5 inch loaf pan coated with cooking spray and bake for 75 minutes; set aside for 10 minutes before removing from the baking tray and serve (cut into slices with a sharp knife.)


calories: around 600 calories, depending on the additions and size of the dish served.

Ketchup sauce: 1/3 cup of ketchup, 3 tablespoons of dark brown sugar, 1 tablespoon of yellow mustard. Mix all ingredients in a small pot, heat until the sugar dissolves, pour portions of roast or a whole roast. You can bake a roast with sauce for 10 minutes in a preheated oven up to 350 degrees F (180 degrees C).


  • Meatloaf in a French pastry, yeast or half-crumb is a great dinner dish for special occasions.

  • Heated slices of roast with a fried or poached egg are an excellent, caloric breakfast.

  • Instead of bread soaked in milk, can be added oatmeal or boiled rice to the meat.

  • Roasting additives: mashed potatoes with bacon, baked macaroni and cheese, white fresh bread, baked potatoes with herbs, or various baked vegetables (for example: asparagus with almonds, glazed carrots, baked beets with balsamic vinegar, Brussels sprouts with bacon).

  • If we eliminate the bacon and prunes from the recipe, then it will be a classic meatloaf with ketchup sauce.
